FFwD - Cafe-style grated carrot salad


This week's French Friday with Dorie is another salad - this time, cafe-style grated carrot salad.

It may be winter and horribly cold (for a Northerner like me, anyway), but I actually enjoyed this salad.  I reduced the quantities down to a quarter to make a salad for one to go with my dinner, and I loved the sweetness of the carrots and currants, the tang of the dressing and the crunch of the walnuts.

Looks great...very pretty and festive. I have actually made this one numerous times (I wonder if I posted it, might have to repost it and link it...lol). It looks prettiest in a glass bowl like this...so nice and refreshing.

This was a weird one for me. I am not sure why... (I only grated two carrots and called it dinner).
The flavors are nice and bright though, so it does actually sound like a nice treat for in the middle of winter.

When I was little I didn't eat carrots b/c Tigger wouldn't eat them.

This looks lovely and fresh and I think I would overcome my mild dislike for raw carrot (I know, strange dislike) for this! :D

Looks like a lovely salad that would be great for summer - though I am starting to feel like salads as I think we have had enough of winter - good luck with busy times!

I liked this salad too!
And I was just glad it wasn't another recipe that needed fresh peaches or nectarines!!! (Makes me miss summer fruits badly!)

I need to catch up and make this one...but you've given me the idea to use dried cranberries instead of raisins...and just a quarter of the recipe :) Glad you enjoyed~

As long as good carrots are available -I think anytime of year is good to enjoy a carrot salad! I like that you made just enough for one person, I probably would have made the full recipe and snacked on it all week, looks so good;-)

Winter in your corner of the world and in mine it is creeping towards to upper 30s today! In fact, it was almost a bit too warm for my poor ice cream maker which was trying to get the ice cream together for next week's recipe.

Your carrot salad looks delicious. I especially like it because it's healthy and nutritious and it fills me up. I think you liked the tanginess dressing like I did. I know you're working hard - carrots are great for the brain!

This wasn't my favorite, though I loved the vibrant color. It looks like a great accompaniment to your dinner. Now that it's already "next week", I hope things at work are less crazy.
