TWD - Coconut Butter Thins


This week's Tuesday with Dorie is hosted by Jayne of The Barefoot Kitchen Witch, who has chosen Dorie's recipe for Coconut Butter Thins.

These biscuits are like a tropical shortbread, with flavours of coconut, lime and macadamias. They were relatively straightforward to make, although I chopped my macadamias a little too chunky for easy rolling.

There was nothing lacy or thin about my version of these biscuits, despite Dorie's description.

I liked these biscuits, although I didn't think they were special enough to make again.

mine werent lacy either - more like shortbread. I did really like them though

They sound delicious although I have to agree they aren't as thin as I imagined them to be (I was picturing a langue de chat or something perhaps) :)

I never roll anything thin enough! I've been lurking at TWD but did skip it this week because no one in the house likes coconut! But your shortbread looks scrumptious.

I just finished making mine and I have to agree with you. I thought they were okay, but nothing special. Your squares turned out much nicer than mine. Mine got all wonky on me!

(Most) of mine were thick like yours - I couldn't taste them of course - but all the cookies were gone from the work kitchen by the afternoon.

"Tropical shortbread" -- that is the perfect description. Mine were not thin or lacy either. We did love them though. Sorry they weren't your absolute favorites. They look wonderful, though!

You’ve got some tasty recipes here...a ton of things for me to try out with my kids. However, I'll stay away from the biscuits, based on your review. :)

mine were lacy. haha... i thought they were pretty addicitive in a way though. BUt definitely NOT pretty at all.

Sorry these aren't worth making again, but I must say--they look delicious! And the flavor combo sounds great. I'm not sure I like my shortbread lacy anyway :)

I think your cookies look fantastic! Mine came out very lacy and thin, but I wanted them thicker, so I forced them into tart shells! HA!

I was out of gallon sized bags so I rolled some of mine too thin. They were lacy and much better than the thicker ones. Although I loved both versions.

Mine weren't lacy either. But they didn't spread like some of the other's did. We liked them - a lot. But then we like shortbread.
